Enjoy Alchemy: Where Ice Cream Fuses with Alcohol

Zach Marzouk visits Enjoy Alchemy, a new ice cream parlour in Palermo that takes the helado chemistry to a whole new level.
If you enjoy ice cream and you enjoy alcohol, then you will Enjoy Alchemy. It’s time to try strange and eccentric flavours such as Mint Julep, aubergine, or Fernet and Cola in an ice cream. Located in Palermo this ice creamery aims to provide its clientele with a different, unique experience, and melt their perceptions of what can be done with ice cream; it’s udderly incredible.

H2O+C2H6O+Milk, Right?

Matías Ezequiel opened his “lab” in September. “I called it Alchemy as we consider ourselves to be alchemists because we have managed to unite alcohol and ice cream, two elements which a priori are against each other – but we managed to do it!”
He gave us the scoop on how he got the idea for mixing the two from a holiday to Mexico where there was an ice cream shop which made slushies with alcohol. “The quality is not the same as ice cream, but I liked the idea of adding alcohol.” Matías decided to copy the concept so when he returned to Buenos Aires he did a Maestro Heladero course where he learnt to make ice cream. He then started testing it with alcohol.

Experiment with taste

If you’re not interested in the chemistry and more interested in the physics of how it’s going to get into your mouth then look at all the flavours you can sample: sweet, sour, and alcoholic. The flavours are displayed on a huge periodic table behind the counter which any ice cream scientist would be proud of. More traditional flavours are on the left and the stranger ones towards the right.
Alcoholic flavours include Heineken, Moscow Mule, and gin and tonic. The Irish cream, which is very popular, was rich and icily perfect in its frozen form; there is definitely a certain chemistry between the ice cream and the alcohol.
No worries if you don’t want alcohol in your ice cream, you can still choose other flavours such as Nutella, beetroot, white chocolate, and caramel flan.
Matías said that out of all the savoury flavours, roquefort is the most popular by far: “It’s a sweet and sour taste, it starts off sweet but finishes with a strong roquefort undertone at the end, it’s great.” He does, however, underline that it’s best for aficionados of roquefort, due to the strong final flavour.
Like all alchemists in pursuit of creating gold, Enjoy Alchemy continues to develop new flavours to try and find that perfect one. Jaeger have even approached them to make a Jaeger ice cream. “We are always innovating,” says Matías.
If you want to break the ice and visit Enjoy Alchemy, it is located on Humboldt 1923 and opens 10am-1am Sunday to Thursday and 10am to 3am on Fridays and Saturdays. For more information, visit the Facebook page.
