Grandma’s Parmesan Potato Wedges:

Prep Time: About 30 minutes
Serves: Four
Ingredients:
  • Four large russet potatoes
  • 1 tablespoon olive oil
  • 2 tablespoons melted butter
  • 3 cups grated parmesan cheese (depending on taste)
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper
Execution:
  1. Preheat oven to 350 degrees.
  2. In a small bowl combine: salt, pepper, garlic powder, paprika, and cumin. Use salt and pepper to taste, this mixture is going to become the seasoning salt to the finished potato wedges.
  3. Each potato will be cut in half with a sharp knife. Each half should be cut in half once more. This will leave the potato in four triangular shaped pieces. These pieces may be cut in half again either (or both) horizontally and vertically to make finger-sized potato wedges. The potato wedges should be relatively the same size and shape, length and width.
  4. Microwave potato wedges on high for 2 to 3 minutes to soften up the potatoes and hasten the baking process. Be sure to cover the potato wedges with a dampened paper towel so the potato wedges don’t dry out in the microwave.
  5. Position the potato wedges on a metal making sheet. Dribble melted butter and olive oil over the top of the potato wedges.
  6. Sprinkle parmesan cheese over potato wedges until evenly coated. Bake in oven at 350 degrees for about 15 minutes or until tender.
  7. Sprinkle seasoning salt on top of the potato wedges. Allow to cool for 2-5 minutes. Enjoy!
