An easy carrot cake recipe for a carrot and ginger cake using walnuts.
This is a great recipe for a carrot cake, suitable for serving with an afternoon tea or as a simple pudding course after a meal. The use of ginger in the recipe adds an extra depth of flavour to the cake, as well as a little warmth, making the cake a perfect recipe for the winter months.
Ingredients Required to Make a Carrot Cake
These quantities should be enough to make one carrot cake in a 20cm cake tin.
Note on the ingredients:
The carrot should have both ends removed and it is recommended that the carrot is also peeled. If not wishing to peel the carrot, then one should scrub the ingredient thoroughly. In addition, the grated carrot is slightly dried in this recipe, this is to allow excess moisture to evaporate, thus giving the cake a better texture.
- 100g Brown sugar
- 1 Large egg
- 100ml Sunflower oil
- 100g Plain flower
- ½ tsp Baking powder
- 1tsp ground ginger
- 1 Small chuck of stem ginger – Grated
- 100g Carrots – Grated
- 35g Walnuts – crushed
How to Make a Carrot Cake – Method
- Preheat an oven to 170c and prepare a 20cm cake tin using greaseproof paper.
- Start by grating the carrot, after grating leave the carrot spread out on a tray for an hour to allow some of the moisture to evaporate.
- Take a large mixing bowl and add the egg, sugar and sunflower oil. Whisk the mixture until an even consistency has been achieved.
- Slowly add the flour, baking powder and ginger to the mixture. Continue to stir using a folding technique with a paddle, rather than a whisk at this stage.
- Once an even consistency has been achieved, add the carrot and walnuts to the mixture and stir until evenly distributed in the mixture. Ensure that there are no “lumps” of grated carrot in the mixture.
- Pour the mixture into the cake tin and bake in the pre-heated oven for around 25 minutes.
- After baking allow the carrot cake to stand in the tin for 10 minutes and then turn out onto a wire cooking rack.
This is the recipe for a basic carrot and ginger cake, the recipe can be easily adapted to personal tastes. Consider adding raisins or additional spices and flavourings such as cinnamon or vanilla. In addition this is a basic sponge recipe, the cake may be enhanced visually by decorating with icing or another from of frosting.
