Make Lemon Curd and Kiwifruit and Orange Jam in the Microwave

Using a microwave means lemon curd and kiwifruit and orange jam can be whipped up in fifteen minutes as tasty sweet spreads for scones or toast.

 



 Compared to the methods used in the past, jam making is a speedy process when a microwave oven is used. No longer do you need to stand over a stove, stirring the simmering fruits for a long time. These recipes for lemon curd and kiwifruit and orange jam are so quick that they are not a chore to make. From chopping board to microwave to pantry shelf in a quarter of an hour has to be good!
When making jam in the microwave it is best to do only small quantities at a time.
Before starting, sterilise the jars by washing them in hot water and standing them in a pre-heated 150 degree oven for 15 minutes. They can be heating while you prepare and cook the fruit. Also, put a saucer in the freezer to chill as you will be using it for testing the setting of the jam.

Lemon Curd Microwave Recipe

No more fiddling around with double-boilers and constant stirring. This lemon curd recipe is quick and easy.
Ingredients:
  • 125 grams butter, cut into small pieces
  • 1 cup sugar
  • finely grated rind of 3 lemons
  • 3/4 cup lemon juice
  • 4 eggs
Method of Making Lemon Curd in the Microwave
  1. Mix the butter, sugar, rind and juice in a large, microwave-safe bowl. Microwave on high for 90 seconds.
  2. Stir and microwave on high again for 90 seconds.
  3. Break the eggs into a bowl and whisk well.
  4. Tip the eggs into the lemon mixture and whisk again.
  5. Microwave on high for five minutes, stirring after every minute.
  6. When ready, the lemon curd mixture should have become thick enough to coat the back of the spoon.
  7. Pour into sterilised jars and seal while hot.
This recipe makes two small jars of lemon curd. In some countries, this is also called lemon honey or lemon cheese. Keep in the refrigerator once opened.

Kiwifruit and Orange Microwave Jam

Choose between green kiwifruit for a tangy taste sensation, or gold kiwifruit for a sweeter, tropical fruit flavour.
Ingredients:
  • 2 tablespoons of orange juice
  • 1 large cooking apple, finely chopped
  • 3/4 cup sugar
  • 4 large or 6 small kiwifruit, finely chopped
Method of Making Kiwifruit and Orange Jam in the Microwave
  1. Put all ingredients in a large, microwave-safe bowl. Stir well.
  2. Microwave on high for five minutes.
  3. Stir and microwave on high for another five minutes.
  4. Mash lightly with a potato masher so the fruits have blended but are still a little chunky.
  5. Microwave on high for two minutes.
  6. Test for setting by putting a teaspoonful on the cold saucer. Draw a finger through the jam. Wait a minute. If the jam is not runny it is ready. If it is still not set, microwave for another minute and test again.
  7. Pour into a sterilised jar and cover while hot..
  8. This recipe makes one large jar of kiwifruit jam.
