To talk about the taste, cauliflower doesn’t exist well by itself. It always needs an extra dash of something to enhance its savor. If taken as a salad ingredient, it goes best with a dressing. If boiled, a pinch of salt, pepper and butter will enhance the tang. When cooked as a curry, it brings out the best in itself!
Easy Indian Cooking – Cauliflower Curry
Ingredients:
- Cauliflower
- Potato
- Green peas (optional)
- Ginger
- Cardamom stick
- Turmeric powder
- Salt
- Tomato puree
- A small bunch of coriander leaves
Preparation:
- Cut cauliflower and potato into medium pieces. (The green leafy parts at the base of the cauliflower can be used for salad.)
- Grate ginger evenly.
- Keep aside 2 or 3 small cardamom sticks.
Method:
- Heat oil in a non stick frying pan.
- Add ginger paste and fry in low heat, till it is light brown/golden in color. When the aroma of fried ginger starts evolving, add the cardamom sticks.
- Cover and fry in low heat for few minutes.
- Add the potato slices first. Mix it evenly with ginger paste and cardamom. Add salt to taste.
- Fry for about 3 minutes. Keep pan covered.
- Now add the cauliflower. (Add green peas – optional). Mix everything evenly and add ¾ tsp of turmeric powder. Cover the pan.
- Toss and turn the ingredients occasionally. Cook in medium heat for about 10 – 15 minutes.
- Add ¾ cup of tomato puree and mix it evenly. Cover and let it simmer for 8-10 minutes. The base will turn dark brown in color. Turn it over. Repeat this a few times till all parts of curry get the base heat.
- Transfer curry into a serving bowl.
- Garnish with freshly peeled, cut coriander leaves. Serve with steaming, white rice or multigrain bread.
Cooking Time:
20 minutes. This easy to cook, delicious cauliflower curry will surely enhance your palate!
