Best Spanish Lentil Soup Recipe from Grandma's Collection

Grandma’s Best Spanish Lentil Soup:

Prep Time: About 2 or 3 hours
Serves: Six
Ingredients:
  • 1 pound of lentils
  • 3 pound ham hock
  • 2 cups carrots
  • 1 medium or large white onion
  • 1 cup celery
  • 3 teaspoons peppercorns
  • 2 tablespoons bacon fat
  • 2 ½ cans of whole tomatoes
  • Parsley
  • 1 tablespoon garlic salt
  • 4 table spoons Worchester sauce
  • 1 teaspoon salt
  • Water
Execution:
  • Sauté ham and peppercorns in bacon fat until tender.
  • Put ham hock and peppercorns in a large saucepan. Add spices and Worchester sauce to the saucepan. Fill the saucepan with water until the vegetables and ham hock are covered by ½ an inch or less of water. Turn the burner on high and bring to a boil. This will be the stock of the soup, and should be allowed to simmer for an hour or more.
  • Use a sharp knife to chop celery, parsley, onion and carrots into small pieces, about ¼ of an inch wide or thick. Add to simmering ham hock stock and cook until vegetables are tender, but still slightly firm.
  • Add lentils and tomatoes to the simmering stock. Stir well to combine all ingredients. Reduce heat and cook until the lentils become tender. Make sure to stir the soup intermittently while it cooks to ensure even cooking.
  • When the lentils are tender, if needed add more salt or pepper and allow to simmer an addition 5 minutes. Add parsley to soup and stir to combine.
  • Allow the soup to cool for 10-15 minutes before serving. Enjoy!
